This easy sausage and veggies recipe is ready in just 20 minutes and the best way to your protein and veggies in just one pan!
Ingredients you need for the One-Pan Sausage Veggies
3/4 lb (340g) smoked or Italian sausage, cut into 1-inch pieces
1 bunch of rainbow carrots
8 oz (225g) fresh green peas
1 shallot, sliced
2 spring onions, sliced
3 cloves garlic, minced
1/4 teaspoon salt and pepper
2 tablespoons olive oil
1 teaspoon Cajun seasoning
1/2 teaspoon Italian seasoning
1/4 cup (60ml) low-sodium chicken broth
1/2 teaspoon red chili pepper flakes, optional
Directions
1. To make the Sausage and Vegetable Skillet: Heat a large skillet over medium heat. Add smoked sausage and cook for about 5 minutes until sausage is golden brown. Remove to a plate and set aside
2. In the same skillet, stir fry the carrots (add a little olive oil if needed) for 4 minutes, then add shallot, garlic, spring onions, and green peas. Season with Italian and Cajun seasoning and cook on medium until vegetables are crisp-tender.
3. Deglaze the vegetables with chicken stock, add the smoked sausage to the skillet, and combine. Garnish with red chili pepper flakes and fresh parsley, and serve the smoked sausage and vegetables. Enjoy! ❤️
