A warm white bean carrot salad recipe with a 2-ingredient lemon maple sauce as a dressing! This white bean carrot salad is easy to make and full of bright flavors!
Ingredients you need for the White Bean and Carrot Salad
1 pound (450g) carrots, peeled and sliced in diagonal
1 can (14oz) cannellini beans, drained and rinsed
1 shallot, thinly sliced
1 tablespoon olive oil (or coconut oil)
1 tablespoon maple syrup
Juice of 1/2 lemon
1/2 teaspoon kosher salt
1 tablespoon fresh dill weed, finely chopped
3 tablespoons sliced almonds
Directions
1. To make the White Beans and Carrot Salad: In a skillet, heat olive oil over medium-high heat. Sauté sliced carrots, stirring frequently, until carrots are just soft and beginning to brown on the edges, about 8-10 minutes.
2. Stir in sliced shallots and continue to sauté in the skillet with carrots for 4 minutes.
3. Stir in maple syrup, lemon juice, and sea salt. Give a quick stir then remove carrots and shallots from heat and transfer to a salad bowl.
4. Add cannellini beans, dill, and sliced almonds to the warm carrots and shallots and toss gently to warm up the beans. Transfer to a serving bowl or shallow dish and sprinkle with more dill and sliced almonds. Serve the White Bean and Carrot Salad immediately. Enjoy! ❤️
