Directions
1. To make the baked stuffed mushrooms: Preheat your oven to 400°F (200ºC). Lightly oil a rimmed baking sheet with cooking spray. Remove the stems from the mushrooms and finely chop them. Arrange the mushroom caps on the prepared baking sheet.
2. Melt butter in a medium skillet over medium heat. Add chopped mushroom stems and cook until they render most of their moisture. Add garlic and cook until fragrant, 1 minute; add the panko breadcrumbs and let toast slightly for 3 minutes. Season the mixture with salt and pepper. Remove from heat and allow to cool slightly.
3. Mix the mushroom stems, bacon bits, parmesan, and cream cheese in a large bowl and season with salt and pepper. Fill mushroom caps with the filling and sprinkle with more Parmesan.
